Zucchini Chocolate Cake

  • 2 1/2 cups flour
  • 1/4 cup cocoa
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup oleo
  • 1 tsp. vanilla
  • 3/4 cup chopped walnuts
  • 1/2 cup cooking oil
  • 1-3/4 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 2 cups grated zucchini-do not peel
  • 6 oz. chocolate bits
DIRECTIONS
  1. Sift together flour, cocoa, baking soda & salt, set aside.
  2. Cream oil, oleo, sugar, add eggs & beat in vanilla. Add dry ingredients and milk, beat until fluffy.
  3. Add zucchini, pour into greased pan-13x9.
  4. Sprinkle with nuts & chocolate bits.
  5. Bake at 350 degrees for 55 minutes. (Bake 15 minutes longer in angel food pan.)
