Zucchini Italian Style

  • 2 tbls unsalted margarine
  • 1/3 cup chopped onion
  • 1 large peeled tomatoe, cut into wedges (can use canned)
  • 3 small zucchini, sliced
  • 1 tsp sugar
  • 1/2 tsp sweet basil
  • 1/4 cup water
  • 2 tbls lemon juice
DIRECTIONS
  1. In large saucepan, melt margarine over medium heat
  2. Sauté onion until tender
  3. Mix in tomatoe, zucchini, sugar, basil, water and lemon juice
  4. Cover and simmer 10 minutes or until zucchini is tender
  5. Note: if using canned tomatoes, slice and add during last minute of cooking, stirring in carefully
