Zucchini Pie

- 2 cups chopped zucchini
- 1/2 cup chopped tomato
- 1/2 cup chopped green bellpepper
- 1/4 cup chopped onion
- 1 tsp minced garlic
- 1/4 cup butter, softened
- 3/4 tsp salt
- 1/2 tsp basil
- 1/2 tsp thyme
- 1/8 tsp pepper
- 1 cup shredded Pepperjack cheese
- 1 1/4 cup milk
- 1/4 cup sour cream
- 3/4 cup baking mix
- 3 eggs
DIRECTIONS
- Heat oven to 400 degrees. Lightly grease a 10 inch pie pan. Cook zucchini, tomato, green pepper, onion and garlic in butter until crisp-tender. Stir in seasonings. Spread in pie plate; sprinkle with cheese. Beat remaining ingredients until smooth. Pour into pie plate. Bake until knife inserted halfway between center and edge comes out clean, 30-35 minutes. Let stand 5-10 minutes.
