Zucchini Pie
INGREDIENTS
  • 2 cups chopped zucchini
  • 1/2 cup chopped tomato
  • 1/2 cup chopped green bellpepper
  • 1/4 cup chopped onion
  • 1 tsp minced garlic
  • 1/4 cup butter, softened
  • 3/4 tsp salt
  • 1/2 tsp basil
  • 1/2 tsp thyme
  • 1/8 tsp pepper
  • 1 cup shredded Pepperjack cheese
  • 1 1/4 cup milk
  • 1/4 cup sour cream
  • 3/4 cup baking mix
  • 3 eggs
DIRECTIONS
  1. Heat oven to 400 degrees. Lightly grease a 10 inch pie pan. Cook zucchini, tomato, green pepper, onion and garlic in butter until crisp-tender. Stir in seasonings. Spread in pie plate; sprinkle with cheese. Beat remaining ingredients until smooth. Pour into pie plate. Bake until knife inserted halfway between center and edge comes out clean, 30-35 minutes. Let stand 5-10 minutes.
