Zuccinni Tomato Casserole
INGREDIENTS
- Servings: 3-4
- 1 med zucchini, sliced thin
- 2 lg tomatoes,peeled and chopped
- med onion, sliced thin and seperated
- 1/2 c cheddar
- 3 slices bacon, cooked and crumbled
- butter
- salt and pepper
- buttered bread crumbs or croutons
DIRECTIONS
- In buttered casserole, layer tomatoes,onion and zucchinni.
- Dot with butter and scatter cheese and bacon over each layer.
- salt and pepper lightly.
- Cover with crumbs (buttered)
- Bake at 400 (covered) about an hour.
- Uncover for last 20 min.
- Serves 3-4
