Zuccinni Tomato Casserole

  • Servings: 3-4
  • 1 med zucchini, sliced thin
  • 2 lg tomatoes,peeled and chopped
  • med onion, sliced thin and seperated
  • 1/2 c cheddar
  • 3 slices bacon, cooked and crumbled
  • butter
  • salt and pepper
  • buttered bread crumbs or croutons
DIRECTIONS
  1. In buttered casserole, layer tomatoes,onion and zucchinni.
  2. Dot with butter and scatter cheese and bacon over each layer.
  3. salt and pepper lightly.
  4. Cover with crumbs (buttered)
  5. Bake at 400 (covered) about an hour.
  6. Uncover for last 20 min.
  7. Serves 3-4
