Zuppa Di Pesce
INGREDIENTS
- 1/4 cup olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz.) Italian-style plum tomatoes, undrained
- 1/2 cup dry white wine, or chicken stock
- 2 Tbsp. chopped fresh basil
- 2 lbs.soft-flesh boneless fish such as cod fillets, red snapper, orange roughy or a mixture, cut into 1-inch chunks
- 1/4 cup DI GIORNO Shredded Parmesan Cheese, opt
DIRECTIONS
- HEAT oil in large saucepan on medium-high heat. Add onions and garlic; cook and stir 4 to 5 min. or until tender.
- STIR in tomatoes and their liquid, the wine and basil. Bring to boil. Reduce heat to medium-low; simmer 10 min.
- ADD fish; simmer an additional 10 min. or until fish flakes easily with fork. Ladle into serving bowl; sprinkle with cheese.
