addictive green beans

  • 1.5lbs fresh green beans, ends snapped
  • 1T dijon mustard
  • 2T red wine vinegar
  • 3T evoo
  • salt, fresh ground pepper
  • >1/2c chopped walnuts
  • 8oz blue cheese, crumbled
  • 2T chopped fresh parsley
  1. beans:
  2. bring pot of water to a boil
  3. add beans and cook covered until tender (~4min)
  4. drain, run under cold water, pat dry
  5. (in a large bowl)
  6. whisk together mustard, vinegar, salt+pepper, evoo
  7. keep whisking until well mixed, slightly thickened
  8. add beans, walnuts, cheese
  9. toss around until well distributed
  10. sprinkle parsley on top
