apple cake with caramel sauce

  • 3 C flour
  • 1 C sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 large eggs, beaten
  • 1/2 C corn oil
  • 2 tsp vanilla
  • 3 C finely chopped apples
  • 1/2 C apple juice
  • 1 C chopped pecans
  • Caramel sauce
DIRECTIONS
  1. In a large bowl combine flour, sugar, soda and salt.
  2. Make a well in the center and set aside.
  3. In a medium bowl combine eggs, oil, apple juice and vanilla.
  4. Stir in apples and pecans.
  5. Add the egg mixture to dry ingredients, just until moistened.
  6. Spread batter in a greased and floured 9 x 13-inch pan.
  7. Bake at 350°F for 45-50 minutes.
  8. Drizzle warm sauce over cake, when it has cooled for 5 minutes, so it can seep into the cake, keeping it moist.
