auntie ranko's chinese chicken salad

  • dressing
  • 2T sugar
  • 2t soy sauce
  • 1T sesame oil
  • 3T rice vinegar
  • 1/4c canola oil
  • 2T sesame seeds
  • 2 heads romaine lettuce thinly sliced
  • 1/2 c slivered almonds
  • 1 c shredded chicken breast (I usually use the costco rotisserie chicken)
  • 10 sheets won ton sheets
DIRECTIONS
  1. combine all dressing ingredients, shake well
  2. slice won ton sheets into 1/2" strips and deep fry - drain
  3. combine lettuce, chicken, and won ton strips
  4. Toss with dressing
  5. sprinkle almonds over top
RECIPE BACKSTORY
This is a staple at our family gatherings - when I make it, I have made my usual changes of omitting the items I don't like, and only using chicken breast (anyone reading any of my recipes, you can assume that it always calls for the whole chicken, but I only use chicken breast) My wonderful auntie now makes a batch for me without the green onions - she is SO good to me!
