baked mini donuts

  • 2 Tbsp butter (softened)
  • 1/8 c vegetable oil
  • 1/4 cup granulated sugar
  • 2 tbsp and 2 tsp brown sugar
  • 1 egg
  • 3/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1 1/3 c all purpose flour
  • 1/2 c milk
DIRECTIONS
  1. preheat oven to 425 degrees f and grease donut pan with cooking spray
  2. in a mixing bowl beat together butter, vegetable oil, and sugars until smooth
  3. add in egg, beating to combine
  4. stir in baking powder, baking soda, nutmeg, salt, and vanilla
  5. stir in flour into the mixture, alternatively with the milk (start and end with flour) making sure everything is combined
  6. spoon the batter into the pan, filling a 1/4 inch shy of the rim
  7. bake donuts for 10 minutes, remove then wait 5 mins. before removing from pan
