  • 400 g grated raw beetroot
  • 175 g grated green apple
  • 1\2 diced red onion
  • 1\2 cup white wine vinegar
  • 1\2 cup balsamic vinegar
  • 1\2 cup brown sugar
  • 1 tbs lemon juice
  • 1\2 tsp Dijon mustard
  • 1 tbs oil
DIRECTIONS
  1. heat oil in a large saucepan and saute the onion until transparent.
  2. add all of the other ingredients, stir
  3. cook on the lowest heat for two hours until it resembles jam
  4. then cool
