black bean avocado corn salad

  • 1 can black beans, drained
  • 1 can niblets, drained
  • 1 ripe avocado
  • 1 clamshell pack of grape tomatoes
  • 1/4 c apple cider vinegar
  • 1/4 c good olive oil
  • 1/8 t garlic tabasco
  • salt and pepper to taste
DIRECTIONS
  1. Put black beans and corn in bowl
  2. dice avocado and add to bowl
  3. cut grape tomatoes in half and add to bowl
  4. whisk together vinegar and olive oil with tabasco and pour over mixture
  5. Gently stir all ingredients, add salt and pepper to taste, if needed
RECIPE BACKSTORY
a former coworker made this once and everyone went crazy for it - I made some changes because I don't like raw onion, but i still think it is a very fresh tasting salad
