black sesame cookies

  • 120g unsalted butter
  • 160g all purpose flour
  • 40g almond flour
  • 80g sugar
  • Pinch kosher salt
  • 40g toasted black sesame seeds
  • 1 large egg yolk
  1. Cut the butter into small cubes and keep them refrigerated until ready to use.
  2. Combine the flour, almond flour, sugar and salt in a food processor.
  3. Add sesame seeds now if looking for finer texture or add them with eggs if looking for whole seeds.
  4. Incorporate the butter
  5. Finally add the egg yolk
  6. Wrap the cookie dough in plastic wrap for an hour.
  7. Once cooled form cookies to desired size
  8. Bake at 350ยบ for 15 minutes or until edges are golden brown.
