blueberry and coconut cake

  • 175g self rasing flour
  • 1tsp baking powder
  • 175g margarine
  • 175g caster sugar
  • 3 medium eggs
  • 100g blueberries
  • 50g dessicated coconut
  1. 1. preheat the oven to 180 degrees centegrade,grease and line a 900g loaf tin.
  2. 2. in a large bowl bream together the margarine and sugar untill light and fluffy.
  3. 3. gradually add the eggs, sift in the flour and baking powder the add coconut and blueberries and mix well.
  4. 4.pour mixture into the prepared in tin then bake in the oven for 40/45 mins or untill a skewer comes out clean.
  5. 5. once baked leave in the tin minutes before turning out onto a wire cooling rack.
this recipe is extremly easy to make but very yummy aswell
