coffee marinade

  • 1 qt regular brewed Kona coffee
  • 1/2 c bottled water
  • 1T cumin seeds, toasted
  • 4T roasted garlic
  • 3 bay leaves
  • 2T worcestershire sauce
  • 1 t crushed red pepper
  • 1/4 c canola oil
  • 1 small red onion sliced
  1. Bring coffee to a boil
  2. In a saucepan, heat oil, add onion, garlic, bay leaves, and cumin.
  3. Saute until onion is softened
  4. Add worcestershire sauce and red pepper
  5. Add water and reduce by half
  6. Add coffee to mixture, stir well to incorporate, and simmer for about 15 minutes.
  7. Cool and strain, using as needed
For a while I got on a kick of trying to incorporate Kona coffee into savory dishes - this was my attempt at a coffee marinade
