creamy dark chocolate cupcakes

  • 1 1/2 c. flour
  • 1 t. baking soda
  • 1 t. salt
  • 1/3 c. cocoa powder
  • 1 c. sugar
  • 1/2 c. oil
  • 1 c. water
  • 1 t. vanilla extract
  • 1 T. vinegar
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Combine oil, sugar, vanilla & vinegar in a large bowl- stir.
  3. In a seperate bowl, combine remaining dry ingredients (flour, baking soda, salt, cocoa powder).
  4. Combine wet & dry ingredients, then add water.
  5. (Add 1/2 cup water, mix, then add the rest of the water)
  6. Mix until lumps fade.
  7. Pour into cupcake cups & bake for 18-20 minutes.
  8. For a cake layer, bake in cake tin for 28-30 minutes.
  9. I serve these cupcakes with a simple cream cheese frosting.
  10. Just beat the ingredients below together:
  11. 3/4 stick butter
  12. 1 block cream cheese
  13. powdered sugar (as much or little as you like)
