creamy dark chocolate cupcakes
INGREDIENTS
- 1 1/2 c. flour
- 1 t. baking soda
- 1 t. salt
- 1/3 c. cocoa powder
- 1 c. sugar
- 1/2 c. oil
- 1 c. water
- 1 t. vanilla extract
- 1 T. vinegar
DIRECTIONS
- Preheat oven to 350 degrees.
- Combine oil, sugar, vanilla & vinegar in a large bowl- stir.
- In a seperate bowl, combine remaining dry ingredients (flour, baking soda, salt, cocoa powder).
- Combine wet & dry ingredients, then add water.
- (Add 1/2 cup water, mix, then add the rest of the water)
- Mix until lumps fade.
- Pour into cupcake cups & bake for 18-20 minutes.
- For a cake layer, bake in cake tin for 28-30 minutes.
- I serve these cupcakes with a simple cream cheese frosting.
- Just beat the ingredients below together:
- 3/4 stick butter
- 1 block cream cheese
- powdered sugar (as much or little as you like)
