easy chile verde
INGREDIENTS

- 2 lbs pork loin, cut into 1" cubes
- 2 4 oz cans Herdez tomatillo sauce
- 1 4 oz can Herdez salsa verde
- 1 3.5 can chopped mild green chiles
- 1 large yellow onion
- 2 T roasted garlic
- 1 t salt
- 1 T canola oil
DIRECTIONS
- put oil into cast iron pot, on medium heat, when hot, add pork loin, browning meat in batches and removing as meat is cooked
- Put onion into pot with salt, reduce heat to medium low and caramelize onion, stirring occasionally
- When onions are fully caramelized, add roasted garlic, meat, and rest of ingredients
- Stir well to mix everything well and scraping up any yummy bits off the bottom of the pot
- Bring to a simmer, and cover, stirring occasionally and cooking for about 45 minutes or until pork is fork tender
