easy chile verde

  • 2 lbs pork loin, cut into 1" cubes
  • 2 4 oz cans Herdez tomatillo sauce
  • 1 4 oz can Herdez salsa verde
  • 1 3.5 can chopped mild green chiles
  • 1 large yellow onion
  • 2 T roasted garlic
  • 1 t salt
  • 1 T canola oil
DIRECTIONS
  1. put oil into cast iron pot, on medium heat, when hot, add pork loin, browning meat in batches and removing as meat is cooked
  2. Put onion into pot with salt, reduce heat to medium low and caramelize onion, stirring occasionally
  3. When onions are fully caramelized, add roasted garlic, meat, and rest of ingredients
  4. Stir well to mix everything well and scraping up any yummy bits off the bottom of the pot
  5. Bring to a simmer, and cover, stirring occasionally and cooking for about 45 minutes or until pork is fork tender
