fast chicken + rice
  • 1-2 chicken breasts, cut into bite sized pieces
  • 1 small yellow onion
  • 1 med green pepper
  • 1 bag flavored lipton rice (i usually use either spanish or mexican)
  • 2-3 small tomatoes
  • monterey jack cheese
  • canola oil
  1. in large skillet, heat canola oil. add chicken breasts, onion, and green peppers, sautee until chicken is no longer pink and onions are soft. add rice + most of the water asked for on the package, bring to boil. reduce heat, cover, and simmer until rice is tender, stirring occasionally.
  2. serve with tomato, cheese, and any other beggies/tobasco sauce/salsa/etc that you desire
