fennel soup

- 1/2 cup butter
- 7 fennel bulbs
- 36 oz vegetable broth
DIRECTIONS
- melt butter in large skillet over medium heat
- add quartered fennel bulbs cook and stir until golden brown (about 10 minutes)
- pour in the broth and simmer until fennel is tender
- ladle into bowls and serve
