garlic smashed potatoes

  • 6 yukon gold potatoes scrubbed
  • 1 T roasted garlic
  • salt and pepper to taste
  • 1 T butter
  • 1/4 c sour cream
  1. fill sauce pan with water and whole potatoes, as well as a handful of salt
  2. Let water come to a boil and cook potatoes until a knife comes out easily
  3. Drain water from potatoes, and keep over low heat to get rid of excess moisture
  4. smash potatoes coarsely with roasted garlic and butter
  5. Mix in sour cream and add salt and pepper to taste
I love yukon gold potatoes, and I love roasted garlic - need I say more :)
