honey mustard chicken tenders

  • 1/3 cup diced almonds
  • 2/3 cup dried multigrain breadcrumbs
  • 12 chicken tenderloins
  • 2 tablespoon olive oil
  • mixed salad leaves, to serve
  • Honey mustard dressing
  • 1 tablespoon Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon white wine vinegar
  1. combine almonds and breadcrumbs in a bowl. coat 1 tenderloins in breadcrumbs mixture. transfer to a plate. repeat with remaining tenderloins
  2. heat oil in a large frying pan over medium - high heat. cook tenderloins for 3 - 4 minutes each side or until golden and cooked through
  3. meanwhile, make honey mustard dressing: place mustard, honey and vinegar in a screw - top jar. seal. shake to combine. divide chicken and salad leaves between plates. top with dressing. serve
