jen's crazy meatloaf

  • 1 lb ground beef
  • 2 eggs
  • 1 c panko
  • 1/2 c milk
  • 1/4 c worchestire sauce
  • 1 t salt
  • 1 t pepper
  • 1 chopped and caramelized onion
  • 1/2 package defrosted frozen peas
  • 1/2 cup ketchup
  • 1/4 cup balsamic vinegar
  1. Mix beef, panko, milk, egg, worchestire sauce, salt, pepper, onion and peas together.
  2. I like to blend this by hand, using gloves, but you can use a wooden spoon as well
  3. Cover and put in fridge for at least a couple of hours - I find that this lets the flavors marry together better
  4. Line 9x12 baking dish with foil and form loaf, liberally covering with ketchup and balsamic vinegar mix.
  5. Cook in 350 degree oven uncovered for about 45 minutes, or until internal temp reaches 170
This meatloaf recipe came from eating it all over the place and taking what I liked and putting it all in one fun place. I love eating this as leftovers in pita bread!
