jen's mexi-cali chicken

  • 4 skinless boneless chicken breasts cut into bite size pieces
  • 2t chili powder
  • 1t cumin
  • 1t salt
  • 1t black pepper
  • 1T canola oil
  • 2T roasted garlic
  • 1 medium onon, diced
  • 1 4 oz can Ortega mild chiles, diced and drained
  • 3/4 c chicken broth
  • 2 T flour
  • 2T water
  • 1 cup sour cream
  1. combine chile powder, salt and pepper in small bowl
  2. rub chicken pieces with spice mixture
  3. add oil to frying pan and brown chicken
  4. remove chicken and put in 9x12 baking dish
  5. caramelize onion in frying pan, add garlic
  6. add chiles and broth and bring to a boil
  7. Blend flour and water together in a small bowl to create slurry, and add to broth mixture
  8. Let cook until sauce thickens and flour is cooked
  9. Add sour cream to sauce
  10. Pour sauce over chicken and bake at 350 degrees for 45 minutes to 60 minutes
This is a mexican style chicken that is pretty basic, but I think has a pretty good sauce that is really good over rice or with tortillas
