lemon marmalade
  • Servings: 2 litres (70fl oz)
  • 500g (1lb 2 oz) lemon, finely chopped
  • 6 water
  • 1.5kg (3lb 5oz) sugar
  1. Combine lemon and water in a saucepan and bring to the boil. Combine to boil stesdily for 20 minutes or until lemon are tender. Add sugar, stir until dissolved and boil briskly for 20 minutes. Remove from heat and allow to stand for 10 minutes
  2. Pour into sterilised jars and seal. The marmalade con be eaten as soon as it has cooled and set
