low-fat banana bread
INGREDIENTS
  • 2 egg whites
  • 1/3 C sugar
  • 1 C smashed very ripe bananas (about 3 medium)
  • 1/3 C buttermilk
  • 1 tbsp vegetable oil
  • 1 tbsp vanilla extract
  • 1 3/4 C all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
DIRECTIONS
  1. Preheat oven to 325°F.
  2. Lightly grease 8 1/2x4 1/2x2 1/2-inch pan; dust with flour.
  3. Using electric mixer; beat all ingredients until just blended.
  4. Transfer batter to prepared pan.
  5. Bake bread until golden brown on top and tester inserted into center comes out clean, about 1 hour.
  6. Turn bread out onto rack and cool.
