parm couscous
INGREDIENTS

  • 2 cups couscous
  • 2 tablespoons butter
  • 2 cup water
  • 1/2 cup grated parmasian cheese
  • 2 tablespoons Extra virgin olive oil
  • 1/4 cup sundried tomatoes roughly chopped
  • 1/4 egg plant cubed
  • 1/4 zuchini cubed
  • 1 teaspoon oregano
  • 1 teaspoon lemmon zest
DIRECTIONS
  1. Vegetables-
  2. In sautee pan warm oil
  3. first add sun dried tomatoes and zuchinni to pan because they need most time to cook
  4. Add eggplant last with oregano cook for about 4 minutes stirring constantly
  5. take off heat
  6. Couscous-
  7. Boil water
  8. Pour couscous in water and cook for about 5 minutes
  9. Place butter in pot and cover for 5 minutes
  10. Fluff with fork and mix butter in while fluffing
  11. -
  12. combine couscouse vegetables and lemon zest in bowl till mixed fully
  13. serve hot :)
