pumpkin and prosciutto salad

  • 300g pumpkin, peeled and seeded
  • 2 tsp olive oil
  • salt and pepper, to taste
  • 4 slices prosciutto
  • 100g cherry tomatoes, halved
  • 75g baby spinach leaves
  • dressing
  • 1/3 cup butttermilk
  • 2 tsp chives
  • 1 small clove garlic, crushed
  1. preheat oven to 200 degrees C. cut pumpkin into 5mm slices. place in a bowl and toss with oil, salt and pepper. put on a tray lined with baking paper. bake for 20 minutes. grill prosciutto until crisp. break into pieces. to make the dressing, mix buttermilk, chives and garlic. to serve, combine pumpkin, prosciutto,tomatoes and spinach, then drizzle with dressing
