pumpkin muffins

INGREDIENTS
  • 1 1/2 c flour
  • 1/2 c sugar
  • 1/2 c brown sugar
  • 1 1/4 tsp pumpkin pie spice
  • 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 c canned pumpkin
  • 1/2 c low fat buttermilk
  • 1/2 c egg substitute
  • 1/2 c applesauce
DIRECTIONS
  1. preheat oven 375
  2. combine flour, sugars, powder, soda, pie spice, and salt in large bowl.
  3. combine pumpkin, buttermilk, egg substitute, and applesauce in another bowl. add to dry ingredients. spoon into WELL GREASED muffin tins and bake for 20 minutes.
  4. *since these are low fat, they tend to be very sticky, so be wary. i adopted this recipe from cooking light a few years ago and have since twiddled with it. i recommend substituting some whole wheat flour for some of the white as well.*
