quinoa with roasted garlic and onions

  • 1/2 c quinoa
  • 1 cup bottled water
  • 4 T roasted garlic
  • 1 can diced tomatoes, drained
  • 1 yellow onion -diced and caramelized
  • 1/2 c grated parmesan reggiano
  • 1/2 t ground grains of paradise
  1. rinse quinoa under cold running water until water is clear
  2. In a saucepan, combine quinoa and water, simmer for about 15 minutes or until quinoa is softened. Remove from heat and drain
  3. Combine roasted garlic, diced tomatoes, and caramelized onion, simmering for about 10 minutes with quinoa
  4. Remove from heat, and add cheese and grains of paradise, mixing well
I wanted to make a simple dish with quinoa that had all my favorite flavors in it, and that I could enjoy hot or cold. This stuff is great for you - full of vitamins and protein
