- 2 punnets ripe cherry tomatoes
- generous glug olive oil
- generous splash good balsamic vinegar
- lrg pinch salt
- lrg pinch sugar
- handful fresh basil leaves
DIRECTIONS
- 1- place tomatoes in a roasting tin and pour over the other ingredients
- 2- pre-heat oven to 190c
- 3- roast for 20-30 minutes until tomatoes have burst and are soft
