simply seared zucchini

  • 6 medium zucchini - try to get similar sized squashes - cut off the ends and cut lengthwise
  • 1 T canola oil
  • 1 T soy sauce
  • 1t hot (spicy) sesame oil
  1. In large frying pan, heat canola and sesame oil
  2. Lay zucchini in pan, cut side down - over medium heat
  3. Let cook until golden brown - about 10 minutes
  4. Turn each piece over, skin side down and cook for about another 10 minutes or until squash is soft
  5. Drizzle soy sauce over zucchini and cook for another 5 or 10 minutes - or until soy sauce has completely soaked into squash
This recipe came about wanting to present some zucchini in a less traditional way, I think it has a simple asian elegance about it that is SO yummy!
