spicy spam fried rice

  • 2 cups leftover rice
  • 1/2 can spicy spam
  • 1/2 bag frozen peas
  • 1 onion diced and carmelized
  • 3 dried shitake mushrooms, soaked in warm water then diced - reserve mushroom water
  • 1T sugar
  • 1T soy sauce or to taste
  • 2 eggs
  1. Slide spam out of it's happy home, cut in half lengthwise - this will be used for another recipe.
  2. Slice and dice spam into 1/4" cubes, then stir fry in wok until crispy.
  3. Add rice, pressing down to create "crust" on rice as well.
  4. Add frozen peas, caramelized onion, and mushroom to mixture, incorporating well.
  5. Add soy sauce to sugar to liquify then drizzle over fried rice, stirring well.
  6. Taste to see if more soy sauce needed.
  7. Push mixture over to side, beat eggs and add to wok.
  8. As egg cooks, push over to side until all egg is cooked, then mix into rest of fried rice.
I grew up on spam - so when I found out that tabasco had combined forces with them to create spicy spam, I knew that I had found the spam of my dreams!!
