spinach salad with strawberries and pecans

  • 8 ounces fresh torn spinach (or baby spinach)
  • 1 1/2 to 2 cups strawberries (cleaned and sliced)
  • 1/2 cup pecan halves or pieces (lightly toasted)
  • Optional: 2 to 3 ounces crumbled goat cheese (or blue cheese)
  1. 1.Toss the spinach with the sliced strawberries, pecans, and cheese, if using. Cover and refrigerate until serving time.
  2. 2.Put the balsamic vinegar, sugar, tarragon, onion and garlic powder, and mustard in a blender. With the blender running, add the vegetable oil in a slow, steady stream. Alternatively, put the dressing ingredients in a jar, cover with a lid, and shake to blend. Taste and adjust seasonings.
  3. 3.When ready to serve, drizzle dressing over the salad and toss lightly.
