step it up pepper brown sugar bacon

  • 1 package thick cut bacon (ideally VandeRose artisan bacon)
  • 1/4 cup brown sugar
  • pepper to taste
  1. preheat oven to 300
  2. place cooling rack over cookie sheet, and lay bacon on cooling rack, I like to lay th efat side over the meatier side so I can get the entire package on the cookie sheet at once
  3. put into oven, and let cook for about 10 minutes, then turn bacon.
  4. After turning bacon, sprinkle on brown sugar and pepper.
  5. I usually have to rotate the pan during cooking because the back of my oven is hotter than the front, but just keep an eye on it to make sure you don't burn it.
  6. Once cooled, you can just pig out, and layer any leftovers between parchment paper to used during the week in sandwiches, salads, the possibilities are endless!
I have always made bacon in the past the traditional way, in a pan - then I started using the microwave which was great but used a whole trees worth of paper towels. Finally I have found my new method of cooking bacon that is not only less messy, but I think gives me a better product!
