stevie's favorite chicken quesadilla

  • 1/2 c shredded cheese
  • 2 uncooked flour tortilla
  • 1/2 c shredded cooked rotisserie chicken
  • 1/2 avocado sliced
  1. in large frying pan, cook tortilla, browning on one side, set aside on plate
  2. put second tortilla in pan until golden brown, then flip
  3. add cheese and chicken in even layer over entire tortilla
  4. when cheese has melted, layer on avocado and put on tortilla on top
  5. Carefully press down 2nd tortilla and flip over, just to heat
  6. Cut into 6 or 8 wedges and serve with salsa or sour cream, or both!
these are a great lunch or snack, and are full of protein too - one of my hubby's faves
