strawberry muffins

  • 1 cup sugar
  • 2 cups all-purpose flour
  • 2 teaspoon baking soda
  • 1/2 teaspoon plus 1 pinch salt
  • 2 large eggs
  • 1 cup buttermilk, room temperature
  • 1 stick unsalted margarine, melted
  • 1 cup coarsely chopped frozen strawberries
DIRECTIONS
  1. 1:preheat oven to 400 degrees
  2. 2:thaw strawberries and dice into 1/4 inches pieces
  3. 3:coat muffins tin with nonstick spray and set aside
  4. 4: combine all dry ingredients and mix well
  5. 5:add diced strawberries and mix again
  6. 6:whisk buttermilk, eggs, and margarine and add dry ingredients
  7. 7: mix for 3 minutes
  8. 8: divide batter between muffins cups and bake for 17-19 minutes
