strawberry muffins

- 1 cup sugar
- 2 cups all-purpose flour
- 2 teaspoon baking soda
- 1/2 teaspoon plus 1 pinch salt
- 2 large eggs
- 1 cup buttermilk, room temperature
- 1 stick unsalted margarine, melted
- 1 cup coarsely chopped frozen strawberries
DIRECTIONS
- 1:preheat oven to 400 degrees
- 2:thaw strawberries and dice into 1/4 inches pieces
- 3:coat muffins tin with nonstick spray and set aside
- 4: combine all dry ingredients and mix well
- 5:add diced strawberries and mix again
- 6:whisk buttermilk, eggs, and margarine and add dry ingredients
- 7: mix for 3 minutes
- 8: divide batter between muffins cups and bake for 17-19 minutes
