tomato sauce
  • Servings: 7 litres (245fl oz)
  • 6kg (13lb 8oz) tomatoes, roughly chopped
  • 1kg (2lb 4oz) onions, roughly chopped
  • 750g (1lb 10oz) sugar
  • 2 cups white vinegar
  • 120g (4 1/4oz) cooking salt
  • 1 1/2 tablespoons whole cloves
  • 1 1/2 tablespoons allspice berries
  • 1/2 teaspoon cayenne pepper
  1. Place all ingredients in a large saucepan. Bring to the boil and cook, stirring regularly, for 4 hours. Strain mixture through a sieve and return to the to clean saucepan. Bring to the boil and cook for 5 minutes
  2. Pour into warm sterilised bottles and seal immediately. Invert bottles briefly. Consume at once or store in a cool, dry and dark place for up to 2 years.
