vegetable pasta soup

  • 2 c chopped onions
  • 2 T olive oil
  • 1 c diced carrot
  • 1 c minced celery
  • 1 t salt
  • 1 t oregano
  • 1/4 t pepper
  • 1 t basil
  • 1 c cubed zucchini
  • 2 16 oz can tomatoes
  • 3 c water
  • 1 16 oz can great northern beans, drained
  • 3/4 c uncooked pasta
  • 1/4 c chopped fresh parsley
DIRECTIONS
  1. 1. in a soup kettle, saute onions in olive oil until they are soft, about 5 min
  2. 2. add carrot, celery, salt, oregano, pepper, basil. cover and cook over low heat for 5 mins.
  3. 3. stir in zucchini, tomatoes, water, and beans. cover and simmer gently for 30 mins.
  4. 4. heat soup to a boil
  5. 5. add pasta and boil until tender, about 10 mins
  6. 6. stir in parsley and serve
