vegetable pasta soup

- 2 c chopped ovens
- 2 T olive oil
- 1 c diced carrot
- 1 c minced celery
- 1 t salt
- 1 t oregano
- 1/4 t pepper
- 1 t basil
- 1 c cubed zucchinis
- 2 16oz cans tomatoes
- 3 c water
- 16 oz cqn great northern beans, drained
- 1/4 cup uncooked pasta
- 1/4 cup chopped fresh parsley
DIRECTIONS
- in a soup kettle, saute onions in olive oil, until, they are soft, about 5 minutes
- add carrot, celery, salt, oregano, pepper, and basil, cover and cook over low heat for 5 minutes
- stir in zucchini, tomatoes, water, and beans, cover and simmer gently for 30 minutes
- heat soup to boil
- add pasta and boil until tender, about 10 minutes
- stir in parsley and serve
