vegetable pasta soup

  • 2 cup chopped onion
  • 2 tbsp olive oil
  • 1 cup diced carrot
  • 1 cup minced celery
  • 1 tsp salt
  • 1 tsp oregano
  • 1/4 tsp pepper
  • 1 tsp basil
  • 1 cup cubed zucchinni
  • 2 16 oz can tomatoes
  • 3 cup water
  • 1 16 oz cn great northern beans drained
  • 3/4 cup uncooked pasta
  • 1/4 cup chopped fresh parsley
DIRECTIONS
  1. In a soup kettle saute onions in olive oil until they are soft about 5 minutes
  2. add carrot celery salt oregano pepper and basil cover and cook over low heat for for 5 minutes
  3. stir in zucchini tomatoes water and beans cover amd simmer gently for 30 minutes
  4. heat soup up to a boil
  5. add pasta and boil until tender about 10 minutes
  6. stir in parsley serve
