vegetable pasta soup

- 2 cup chopped onion
- 2 tbsp olive oil
- 1 cup diced carrot
- 1 cup minced celery
- 1 tsp salt
- 1 tsp oregano
- 1/4 tsp pepper
- 1 tsp basil
- 1 cup cubed zucchinni
- 2 16 oz can tomatoes
- 3 cup water
- 1 16 oz cn great northern beans drained
- 3/4 cup uncooked pasta
- 1/4 cup chopped fresh parsley
DIRECTIONS
- In a soup kettle saute onions in olive oil until they are soft about 5 minutes
- add carrot celery salt oregano pepper and basil cover and cook over low heat for for 5 minutes
- stir in zucchini tomatoes water and beans cover amd simmer gently for 30 minutes
- heat soup up to a boil
- add pasta and boil until tender about 10 minutes
- stir in parsley serve
