wendy's 14 Karott Cake

  • 1 1/2 c brown sugar
  • 2/3 c oil
  • 4 eggs
  • 2 c flour
  • 2t baking powder
  • 1 1/2 t baking soda
  • 1t salt
  • 2 t cinnamon
  • 2 c grated carrots
  • 1 c. crushed pineapple
  • frosting
  • 1/2 c butter
  • 8 oz cream cheese – softened
  • 1t vanilla
  • 1 lb powdered sugar
DIRECTIONS
  1. Blend brown sugar, oil, and eggs
  2. Add flour, baking powder, baking soda, salt, and cinnamon
  3. Add carrots and pineapple
  4. Pour into 9x12 pan and bake for 350 degrees for 35 – 40 minutes
  5. Make frosting by combining all ingredients very well until light and fluffy
  6. When cake is cool, frost very generously

My cousin Wendy's carrot cake is really good, and there were very few adjustments that I even wanted to make. One of the best parts of this cake is the frosting and there is plenty of it!
