zesty spinach salad

  • 1 lb fresh spinach
  • 1/2 lb bean sprouts
  • 2 hard boiled eggs, chopped
  • 6 slices bacon cooked crispy and crumbled
  • dressing
  • 1 c canola oil
  • 1/2 c white vinegar
  • 1/2 c sugar
  • 1/3 ketchup
  • 1 onion diced and caramelized
  • 1/2 t salt
DIRECTIONS
  1. Combine all salad dressing ingredients, shake well and store in fridge for 24 hours
  2. Layer spinach, bean sprouts, hard boiled egg and bacon and cover overnight.
  3. Right before serving, shake dressing well and pour over salad, tossing well.
