"Grandma Kerr's" Chicken and Dressing
INGREDIENTS
  • Chicken or Cornish Hen, boiled and de-boned
  • Cornbread, baked according to package directions, crumbled
  • 1/2 stick butter
  • 4 bell peppers, chopped
  • 1 package celery, chopped
  • 2 -3 bunches of green onions, chopped
  • 1/2 white onion chopped
  • 6 eggs, boiled
  • chicken stock
  • salt, pepper, garlic powder, onion powder, poultry seasoning, sage to taste
DIRECTIONS
  1. Boil chicken or cornish hen and allow to cool.
  2. De-bone and chop the chicken, and save the broth.
  3. Bake cornbread according to package directions and then allow to cool.
  4. Saute chopped bell peppers, celery, green onions, and white onions in butter.
  5. Boil eggs, allow to cool, and slice.
  6. Crumble cornbread, add the sliced eggs and the saute mixture, stir.
  7. Add broth to make a cake mix consistency.
  8. Add salt, pepper, garlic powder, onion powder, poultry seasoning, and sage to taste.
  9. Add chopped chicken.
  10. Bake at 350* until lightly brown on top.
