"Leftover Chicken" Chicken and Rice
  • chicken (whole or breasts) baked or turkey leftovers
  • rice
  • onion, chopped (white or yellow)
  • garlic, chopped
  • mushrooms, sliced
  • chicken broth
  • soup (cream of chicken or cream of mushroom)
  • salt, black pepper, garlic powder, onion powder to taste
  1. Bake or grill seasoned chicken or turkey.
  2. Or use leftovers.
  3. Allow chicken to cool slightly before removing the meat from the bones.
  4. Chop the chicken into chunks.
  5. Cook rice according to directions.
  6. Saute chopped onions, garlic and mushrooms.
  7. Add chicken, onions, garlic, mushrooms, broth, and cream of soup to the rice.
  8. Add spices to taste and let it simmer a couple of minutes.
This is an easy recipe anytime you have some leftover chicken, turkey or even pork chops.
