"Leftover Chicken" Chicken and Rice

- chicken (whole or breasts) baked or turkey leftovers
- rice
- onion, chopped (white or yellow)
- garlic, chopped
- mushrooms, sliced
- chicken broth
- soup (cream of chicken or cream of mushroom)
- salt, black pepper, garlic powder, onion powder to taste
DIRECTIONS
- Bake or grill seasoned chicken or turkey.
- Or use leftovers.
- Allow chicken to cool slightly before removing the meat from the bones.
- Chop the chicken into chunks.
- Cook rice according to directions.
- Saute chopped onions, garlic and mushrooms.
- Add chicken, onions, garlic, mushrooms, broth, and cream of soup to the rice.
- Add spices to taste and let it simmer a couple of minutes.
