"Tangy" Pork Chops

INGREDIENTS
  • 4 bone in pork chops (1/2 inch thick ) (used 6 small boneless, multiplied everything by 0.5)
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 med onion, sliced or chopped
  • 2 celery ribs, chopped (maybe only 1)
  • 1 large green pepper sliced (omitted)
  • 1 can stewed tomatoes (used Italian diced.. don't like stewed)
  • 1/2 c ketchup
  • 2 TBS cider vinegar
  • 2 TBS brown sugar
  • 2 TBS worcestershire sauce
  • 1 TBS lemon juice
  • 1 beef bouillion cube
  • 2 TBS corn starch
  • 2 TBS water
DIRECTIONS
  1. spray crock pot w non=stick
  2. place chops in crock pot
  3. sprinkle w salt & pepper
  4. add the onions, celery,green peppers, tomatoes (drained them)
  5. combine the ketchup, vinegar, sugar, W sauce, lemon juice, & boullion in a separate bowl
  6. Pour over veggies
  7. Cook covered on low 8-10 hrs until tender (did on high instead for a while)
  8. Mix cornstarch & water until smooth
  9. stir into liquid in slow cooker
  10. cover and cook high for 30 min or until thickened
  11. serve w/ rice (I did fried rice)
